Gastronorm is a standard system of measures in the catering sector, regulated by the EN 631 standard, which uses universal standard dimensions for containers, trays, pans and equipment such as ovens, refrigerators, cabinets, bain-marie trolleys, buffet displays.

 

Gastronorm containers, what are the types It would be impossible to imagine a kitchen without gastronorm containers. First of all, the gastronorm system is a standard of measures and dimensions of containers, bowls, trays and pans. Thanks to this system it is possible to use the same containers for all catering appliances, such as ovens, refrigerators, kettles or service trolleys, and the lids to match are universal. There are different types and sizes: from small bowls to larger trays. The standardized dimensions are very useful for the catering sector, avoiding looking for specific measures that are often impossible to find. Let's see what are the characteristics and types of gastronorm containers.

Gastronorm containers: characteristics The gastronorm containers on the market differ mainly in size and materials, as well as function. The most common are the classic ones in stainless steel, resistant and durable, but also in unbreakable anti-cut tritan. A good gastronorm container must be made of resistant and robust materials, capable of resisting rust or other corrosive materials such as detergents. Some of these containers are dishwasher safe, so as to avoid too frequent and manual cleaning that can waste precious time. Generally, stainless steel greatly facilitates cleaning, being a particularly slippery material that does not retain dirt. Plastic materials are also very popular, such as propylene and polycarbonate, which are less resistant but cheaper. For a professional kitchen it is always better to buy gastronorm containers in sets, which vary in quantity and size. As for the measures, the main standard one is GN 1/1 which corresponds to 325x530 mm, which means that they have a single compartment. In relation to this measure there are then multiples such as GN 2/1 and submultiples such as GN ½ or GN 1/6 up to even 1/9. Another important feature is the depth of the containers, which can be 10 mm, 20 mm, 45 mm up to 200 mm. Gastronorm containers in stainless steel The favorite material for these containers is steel, especially for its ease of cleaning and resistance. Among the containers we have trays, risers, lids and trays of various sizes. They are convenient for transporting food, even if the special lids are sold separately, and stackable thanks to the standard sizes. Better to choose complete sets, usually of 8 different pieces. The cost is not high and per piece varies between € 5 and € 10. Made of porcelain The gastronorm containers in porcelain are excellent for buffets, giving elegance to the service. Many models are also resistant to high temperatures in the oven, up to 300 ° C and can also be baked in the microwave. Although very resistant, porcelain gastronorm containers are very heavy and more expensive. They cost € 20/25 per piece. Other materials Other materials used are for example propylene, polycarbonate or tritan. They are very economical and stable containers, often supplied with a lid. They withstand temperatures ranging between -10 ° C and + 70 ° C, so they cannot be used in the oven. They are dishwasher safe and also very convenient for transporting food.
